 Creamy White Bean & Potato Stew

 Ingredients

  • 2 cups cooked white beans, or canned white beans, drained and rinsed
  • 2 medium potatoes, peeled and diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • Fresh parsley, for garnish (optional)

Step 1: Prepare the Base

Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook for a few minutes until soft and translucent.

Add the minced garlic and cook for about 1 minute, stirring frequently so it does not burn.

Step 2: Add the Potatoes

Add the diced potatoes to the pot and stir well. Cook for 2–3 minutes, allowing the potatoes to absorb some of the delicious flavors.

Step 3: Simmer

Pour in the vegetable broth. Add the salt, black pepper, and dried thyme.

Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 15–20 minutes, or until the potatoes are tender.

Step 4: Add the White Beans

Add the cooked white beans to the pot and gently stir.

Continue cooking for another 5–10 minutes until the beans are heated through and the flavors have blended together.

Step 5: Make It Creamy

For a naturally creamy texture, use a potato masher or the back of a spoon to mash some of the potatoes and white beans directly in the pot.

Do not mash everything—leave some beans and potato pieces whole for a delicious, hearty texture.

Step 6: Serve

Taste and adjust the seasoning if needed.

Serve hot with a drizzle of olive oil and a sprinkle of fresh parsley.

 Tips

  • Mash more beans and potatoes if you prefer a thicker and creamier stew.
  • Add a splash of lemon juice before serving for extra freshness.
  • You can add carrots, celery, or spinach for additional flavor.
  • For a richer flavor, chicken broth can be used instead of vegetable broth.
  • Serve with crusty bread or toasted sandwiches.

 Storage

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Reheat gently on the stove, adding a little water or broth if the stew becomes too thick.
