Bacon, Egg & Cheese Breakfast Sandwiches
These Bacon, Egg & Cheese Sandwiches are crispy, cheesy, savory, and incredibly satisfying! Perfect for a quick breakfast, weekend brunch, or an easy grab-and-go meal.
Ingredients
- 4 English muffins, bagels, or breakfast rolls
- 8 slices bacon
- 4 large eggs
- 4 slices cheddar cheese
- 1 tablespoon butter
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon mayonnaise, optional
- 1 tablespoon ketchup or hot sauce, optional
Instructions
- Cook the bacon:
Heat a large skillet over medium heat. Add the bacon and cook for 4–6 minutes per side, or until crispy and golden. Transfer to a paper towel-lined plate to drain. Leave a little bacon grease in the skillet for extra flavor. - Toast the bread:
Slice the English muffins or rolls in half. Toast them in the same skillet, cut-side down, until lightly golden and crisp. Set aside. - Cook the eggs:
Melt the butter in the skillet over medium-low heat. Crack in the eggs and season with salt and black pepper. Cook until the whites are set and the yolks reach your preferred doneness. For a sandwich that is easier to eat, gently break the yolks while cooking. - Add the cheese:
Place one slice of cheddar cheese over each egg. Cover the skillet for about 30–60 seconds, just until the cheese melts. - Assemble the sandwiches:
Spread mayonnaise, ketchup, or your favorite sauce on the toasted bread, if desired. Add the cheesy egg, followed by two slices of crispy bacon. - Finish and serve:
Place the top half of the bread over the filling. Serve immediately while hot and cheesy.
Tips
- For extra crispy bacon, cook it a little longer over medium heat.
- Try American cheese, Swiss, pepper jack, or mozzarella instead of cheddar.
- Add sliced avocado, tomato, or caramelized onions for extra flavor.
- For a spicy kick, add hot sauce or sliced jalapeños.
- To make meal-prep sandwiches, wrap them individually and refrigerate. Reheat thoroughly before serving.
