Classic Blackberry Cobbler

A warm, old-fashioned Blackberry Cobbler filled with sweet, juicy blackberries and topped with a buttery golden crust. Serve it warm with a scoop of vanilla ice cream for the ultimate comforting dessert!

Ingredients

  • ½ cup salted butter, melted
  • 1 cup self-rising flour
  • 1½ cups granulated sugar, divided
  • 1 cup whole milk
  • ½ teaspoon vanilla extract
  • 3 cups fresh or frozen blackberries
  • Vanilla ice cream, for serving

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Pour the melted butter into an 8-inch square baking dish.
  3. In a medium bowl, combine the self-rising flour and 1 cup of the sugar.
  4. Add the milk and vanilla extract. Stir until the batter is smooth and well combined.
  5. Pour the batter directly over the melted butter. Do not stir.
  6. In another bowl, gently toss the blackberries with the remaining ½ cup sugar.
  7. Spoon the sweetened blackberries evenly over the batter. Again, do not stir. As the cobbler bakes, the batter will rise around the berries and create a delicious golden topping.
  8. Bake for 50 to 60 minutes, or until the top is golden brown and the blackberry filling is bubbling.
  9. Allow the cobbler to cool for about 10 minutes before serving.
  10. Serve warm with a generous scoop of vanilla ice cream.

Tips

  • You can use either fresh or frozen blackberries. If using frozen berries, there is no need to thaw them first.
  • If you don’t have self-rising flour, mix together 1 cup all-purpose flour, 1½ teaspoons baking powder, and ½ teaspoon salt.
  • For extra flavor, add a little lemon zest or a pinch of cinnamon to the blackberry mixture.
