Mediterranean Blueberry Banana Baked Oatmeal Cupcakes
These soft, naturally sweet baked oatmeal cups are packed with wholesome oats, ripe banana, and juicy blueberries. They’re perfect for a quick breakfast, meal prep, or a grab-and-go snack.

- 2 cups old-fashioned rolled oats
- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- 2 ripe bananas, mashed
- 1 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons honey or maple syrup
- 1 cup fresh blueberries
- 2 tablespoons chopped walnuts or almonds, optional
Instructions
- Preheat your oven to 350°F (175°C). Grease a 12-cup muffin pan or line it with silicone muffin liners.
- In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt.
- In another bowl, mash the bananas until smooth. Whisk in the milk, egg, vanilla, and honey or maple syrup.
- Pour the wet mixture into the dry ingredients and stir until everything is well combined.
- Gently fold in the blueberries and nuts if using.
- Divide the mixture evenly among the muffin cups, filling each about three-quarters full.
- Bake for 25–30 minutes, or until the oatmeal cups are golden around the edges and set in the center.
- Let them cool in the pan for about 10 minutes before transferring them to a wire rack.
- Enjoy warm, or refrigerate for an easy breakfast throughout the week.
