Ingredients
- 2 large sweet potatoes, peeled and cut into 1-inch cubes
- 4 large carrots, peeled and sliced into thick rounds
- 2 tablespoons olive oil
- 2 tablespoons melted butter
- 2 tablespoons brown sugar
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup dried cranberries
- ½ cup chopped walnuts
For the Cranberry Glaze
- ½ cup cranberry sauce
- 2 tablespoons maple syrup
- 1 tablespoon orange juice
- 1 tablespoon butter
- ½ teaspoon cinnamon
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a large baking sheet or line it with parchment paper.
- Add the cubed sweet potatoes and sliced carrots to a large bowl.
- Drizzle with olive oil and melted butter. Sprinkle with brown sugar, cinnamon, nutmeg, salt, and black pepper. Toss well until every piece is evenly coated.
- Spread the sweet potatoes and carrots in a single layer on the prepared baking sheet. Avoid overcrowding so the vegetables can caramelize beautifully.
- Roast for 30–40 minutes, turning everything halfway through, until the sweet potatoes and carrots are tender, golden, and caramelized around the edges.
- While the vegetables roast, prepare the cranberry glaze. Add the cranberry sauce, maple syrup, orange juice, butter, and cinnamon to a small saucepan over medium-low heat.
- Stir gently for 3–5 minutes, until the mixture becomes warm, smooth, and slightly glossy.
- Remove the roasted vegetables from the oven and transfer them to a serving dish.
- Drizzle the warm cranberry glaze over the sweet potatoes and carrots. Gently toss to coat.
- Sprinkle generously with chopped walnuts and dried cranberries.
