Slow Cooker Mushroom Beef Tips
Ingredients
- 2 lb (900 g) beef stew meat or sirloin tips, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 16 oz (450 g) mushrooms, sliced
- 2 cups beef broth
- 1 packet onion soup mix
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- ½ tsp black pepper
- 2 tbsp cornstarch
- 2 tbsp cold water
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Brown the beef in batches for 2–3 minutes per side. This step adds extra flavor but can be skipped if you’re short on time.
- Transfer the browned beef to the slow cooker.
- Add the diced onion, minced garlic, and sliced mushrooms over the beef.
- In a bowl, whisk together the beef broth, onion soup mix, Worcestershire sauce, thyme, and black pepper.
- Pour the mixture over the beef and vegetables.
- Cover and cook:
- Low: 7–8 hours
- High: 4–5 hours
- About 30 minutes before serving, mix the cornstarch with the cold water to make a slurry. Stir it into the slow cooker, cover, and continue cooking until the sauce thickens.
- Garnish with fresh parsley before serving.
