Flavorful Roasted Pork Delight

Ingredients
- 3–4 lb pork loin roast
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 teaspoons paprika
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- 1 tablespoon Dijon mustard (optional)
- 1 cup chicken broth
Instructions
- Preheat the oven to 375°F (190°C).
- Pat the pork roast dry with paper towels.
- In a small bowl, combine the olive oil, garlic, salt, pepper, paprika, onion powder, thyme, rosemary, oregano, and Dijon mustard (if using) to make a paste.
- Rub the seasoning mixture evenly over the entire pork roast.
- Place the roast on a rack in a roasting pan or in a baking dish. Pour the chicken broth into the bottom of the pan.
- Roast for 60–90 minutes, or until the internal temperature reaches 145°F (63°C).
- Remove the roast from the oven and let it rest for 10–15 minutes before slicing.
- Slice and serve with the pan juices and your favorite side dishes.

- For extra flavor, marinate the seasoned pork in the refrigerator for 2–12 hours before roasting.
- Add carrots, potatoes, and onions to the pan during the last 45–60 minutes of cooking for a complete one-pan meal.
