Heavenly Comforting Soup

Ingredients

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 1 lb (450 g) boneless, skinless chicken breast or thighs, diced
  • 6 cups chicken broth
  • 2 medium potatoes, peeled and diced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • ½ tsp black pepper
  • 1 tsp salt (or to taste)
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 2 cups fresh spinach, chopped
  • 1 tbsp cornstarch mixed with 2 tbsp cold water (optional, for a thicker soup)

Instructions

  1. Heat the butter and olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery. Cook for 5–6 minutes until softened.
  3. Stir in the garlic and cook for 1 minute.
  4. Add the diced chicken and cook until lightly browned.
  5. Pour in the chicken broth, then add the potatoes, thyme, parsley, salt, and pepper.
  6. Bring to a boil, then reduce the heat and simmer for 20–25 minutes, or until the potatoes are tender and the chicken is fully cooked.
  7. Stir in the heavy cream and shredded cheddar cheese until melted and smooth.
  8. Add the spinach and cook for 2–3 minutes until wilted.
  9. If you’d like a thicker soup, stir in the cornstarch slurry and simmer for another 2–3 minutes.
  10. Taste and adjust the seasoning as needed.

Serving Suggestions

Serve hot with crusty bread, garlic toast, or buttery biscuits for the ultimate comforting meal. Enjoy!
