Slow Cooker Cowboy Chicken & Beans
A hearty crockpot dinner made with juicy chicken breasts and savory baked beans in a sweet smoky sauce — easy, comforting, and packed with flavor!
Ingredients:
- 3 boneless skinless chicken breasts
- 2 cans baked beans
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/3 cup BBQ sauce
- 2 tablespoons brown sugar
- 1 tablespoon mustard
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon olive oil
Instructions:
- Heat olive oil in a skillet and lightly sear the chicken breasts for 2 minutes per side.
- Add baked beans, onion, garlic, BBQ sauce, brown sugar, mustard, paprika, salt, and pepper to the slow cooker. Stir well.
- Place the chicken breasts on top of the beans mixture.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until the chicken is tender.
- Spoon extra sauce and beans over the chicken before serving.
