Slow Cooker Cowboy Chicken & Beans

A hearty crockpot dinner made with juicy chicken breasts and savory baked beans in a sweet smoky sauce — easy, comforting, and packed with flavor!

Ingredients:

  • 3 boneless skinless chicken breasts
  • 2 cans baked beans
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/3 cup BBQ sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil

Instructions:

  1. Heat olive oil in a skillet and lightly sear the chicken breasts for 2 minutes per side.
  2. Add baked beans, onion, garlic, BBQ sauce, brown sugar, mustard, paprika, salt, and pepper to the slow cooker. Stir well.
  3. Place the chicken breasts on top of the beans mixture.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until the chicken is tender.
  5. Spoon extra sauce and beans over the chicken before serving.
