Firecracker Chicken Cottage Cheese Tortilla Lasagna
Ingredients
For the Filling:
- 2 cups cooked shredded chicken
- 1 cup cottage cheese
- 1 1/2 cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
Firecracker Sauce:
- 1/2 cup buffalo sauce
- 1/4 cup honey or sugar-free honey substitute
- 2 tablespoons hot sauce
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and black pepper to taste
Layers:
- 6 small flour tortillas
- Chopped green onions or parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix buffalo sauce, honey, hot sauce, garlic powder, paprika, salt, and pepper.
- In another bowl, combine shredded chicken with half of the firecracker sauce.
- Mix cottage cheese and cream cheese until creamy.
- In a baking dish, spread a thin layer of sauce on the bottom.
- Add tortillas, then layer:
- Chicken mixture
- Cottage cheese mixture
- Mozzarella and cheddar cheese
- Repeat the layers until ingredients are used up. Finish with cheese and extra sauce on top.
- Bake uncovered for 25–30 minutes until hot and bubbly with a golden cheesy top.
- Let rest for 5 minutes before slicing. Garnish with green onions or parsley.
