Keto Chocolate Cookie Sandwiches

Ingredients

For the Cookies:

  • 1 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup keto sweetener (erythritol or monk fruit)
  • 2 tablespoons melted butter
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt

For the Filling:

  • 3.5 oz (100 g) cream cheese, softened
  • 2 tablespoons butter
  • 1/4 cup powdered keto sweetener
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (180°C).
  2. In a bowl, mix almond flour, cocoa powder, sweetener, baking powder, and salt.
  3. Add melted butter, egg, and vanilla. Mix until a dough forms.
  4. Roll into small balls and gently flatten on a lined baking tray.
  5. Bake for 10–12 minutes, then let cool completely.

Make the Filling

  1. Beat cream cheese and butter until smooth and creamy.
  2. Add powdered sweetener and vanilla, then mix well.
  3. Spread or pipe the filling between two cookies.
