Keto Chocolate Cookie Sandwiches
Ingredients
For the Cookies:
- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup keto sweetener (erythritol or monk fruit)
- 2 tablespoons melted butter
- 1 egg
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- Pinch of salt
For the Filling:
- 3.5 oz (100 g) cream cheese, softened
- 2 tablespoons butter
- 1/4 cup powdered keto sweetener
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (180°C).
- In a bowl, mix almond flour, cocoa powder, sweetener, baking powder, and salt.
- Add melted butter, egg, and vanilla. Mix until a dough forms.
- Roll into small balls and gently flatten on a lined baking tray.
- Bake for 10–12 minutes, then let cool completely.
Make the Filling
- Beat cream cheese and butter until smooth and creamy.
- Add powdered sweetener and vanilla, then mix well.
- Spread or pipe the filling between two cookies.
