Fluffy Bacon & Egg Breakfast Burritos
The ultimate hearty breakfast wrap — loaded with crispy bacon, fluffy scrambled eggs, melty cheese, and colorful peppers all wrapped in a warm tortilla. Perfect for busy mornings, meal prep, or weekend brunch!
Ingredients:
- 6 strips bacon, chopped
- 1 bell pepper, diced
- 1 small onion, diced
- 6 large eggs
- 2 tbsp milk
- Salt & black pepper, to taste
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 1 tbsp butter or oil
- Optional: salsa, avocado, hot sauce
Instructions:
- Cook the bacon
In a skillet over medium heat, cook chopped bacon until crispy. Remove and place on paper towels. Leave a little bacon grease in the pan. - Sauté the veggies
Add diced bell pepper and onion to the skillet. Cook for 3–4 minutes until softened. - Make the fluffy eggs
In a bowl, whisk eggs with milk, salt, and pepper. Pour into the skillet and cook gently, stirring until soft and fluffy. - Assemble the burritos
Warm tortillas slightly. Fill each tortilla with scrambled eggs, crispy bacon, sautéed veggies, and shredded cheese. - Wrap & toast
Fold in the sides and roll tightly into burritos. Toast seam-side down in a dry skillet for 1–2 minutes until golden and crispy. - Serve & enjoy
Serve warm with salsa, avocado, or your favorite hot sauce!
