Fluffy Bacon & Egg Breakfast Burritos

The ultimate hearty breakfast wrap — loaded with crispy bacon, fluffy scrambled eggs, melty cheese, and colorful peppers all wrapped in a warm tortilla. Perfect for busy mornings, meal prep, or weekend brunch!

Ingredients:

  • 6 strips bacon, chopped
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 6 large eggs
  • 2 tbsp milk
  • Salt & black pepper, to taste
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1 tbsp butter or oil
  • Optional: salsa, avocado, hot sauce

Instructions:

  1. Cook the bacon
    In a skillet over medium heat, cook chopped bacon until crispy. Remove and place on paper towels. Leave a little bacon grease in the pan.
  2. Sauté the veggies
    Add diced bell pepper and onion to the skillet. Cook for 3–4 minutes until softened.
  3. Make the fluffy eggs
    In a bowl, whisk eggs with milk, salt, and pepper. Pour into the skillet and cook gently, stirring until soft and fluffy.
  4. Assemble the burritos
    Warm tortillas slightly. Fill each tortilla with scrambled eggs, crispy bacon, sautéed veggies, and shredded cheese.
  5. Wrap & toast
    Fold in the sides and roll tightly into burritos. Toast seam-side down in a dry skillet for 1–2 minutes until golden and crispy.
  6. Serve & enjoy
    Serve warm with salsa, avocado, or your favorite hot sauce!
