Slow Cooker Beef & Potatoes
Tender chunks of beef, buttery potatoes, and rich savory gravy slow-cooked until everything melts in your mouth. This cozy one-pot meal is pure comfort food and perfect for busy days!
Ingredients:
- 1½ lbs beef stew meat
- 1 lb baby potatoes, halved
- 1 onion, diced
- 2 cups beef broth
- 2 tbsp Worcestershire sauce
- 3 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- 1 tsp Italian seasoning
- 2 tbsp olive oil
- 2 tbsp cornstarch (optional, for thickening)
Instructions:
- Heat olive oil in a skillet and quickly brown the beef on all sides.
- Add potatoes and onions to the slow cooker.
- Place browned beef on top.
- In a bowl, mix beef broth, Worcestershire sauce, garlic, paprika, Italian seasoning, salt, and pepper.
- Pour mixture over the beef and potatoes.
- Cover and cook:
- LOW for 7–8 hours
- HIGH for 4–5 hours
- For a thicker gravy, mix cornstarch with 2 tbsp cold water and stir into the slow cooker during the last 20 minutes.
- Serve hot with crusty bread or a fresh salad.
