Fluffy Blueberry Cloud Bread with Cottage Cheese

Ingredients
- 3 large eggs
- 1 cup cottage cheese
- 1 tablespoon honey or sweetener of choice
- 1/4 teaspoon cream of tartar
- 1/2 teaspoon vanilla extract
- 1/2 cup fresh blueberries
- 2 tablespoons cornstarch or arrowroot powder
- Pinch of salt
Instructions
- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Separate the eggs carefully into two bowls. Place the egg whites in a large clean bowl and the yolks in another bowl.
- Add the cottage cheese, honey, vanilla extract, cornstarch, and salt to the egg yolks. Blend or whisk until smooth and creamy.
- Add the cream of tartar to the egg whites. Beat with a hand mixer until stiff peaks form.
- Gently fold the egg yolk mixture into the whipped egg whites using a spatula. Be careful not to deflate the mixture.
- Fold in the blueberries gently.
- Spoon the mixture into small rounds or one large loaf shape on the prepared baking sheet.
- Bake for 25–30 minutes, or until golden brown and fluffy.
- Let cool for a few minutes before serving.
Tips
- For extra flavor, add a little lemon zest.
- Best enjoyed fresh, but can be refrigerated for up to 2 days.
- Delicious topped with Greek yogurt or a drizzle of honey.
