Fluffy Blueberry Cloud Bread with Cottage Cheese

A light, airy, protein-packed bread that melts in your mouth! Perfect for breakfast, brunch, or a healthy snack.

Ingredients

  • 3 large eggs
  • 1 cup cottage cheese
  • 1 tablespoon honey or sweetener of choice
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh blueberries
  • 2 tablespoons cornstarch or arrowroot powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Separate the eggs carefully into two bowls. Place the egg whites in a large clean bowl and the yolks in another bowl.
  3. Add the cottage cheese, honey, vanilla extract, cornstarch, and salt to the egg yolks. Blend or whisk until smooth and creamy.
  4. Add the cream of tartar to the egg whites. Beat with a hand mixer until stiff peaks form.
  5. Gently fold the egg yolk mixture into the whipped egg whites using a spatula. Be careful not to deflate the mixture.
  6. Fold in the blueberries gently.
  7. Spoon the mixture into small rounds or one large loaf shape on the prepared baking sheet.
  8. Bake for 25–30 minutes, or until golden brown and fluffy.
  9. Let cool for a few minutes before serving.

Tips

  • For extra flavor, add a little lemon zest.
  • Best enjoyed fresh, but can be refrigerated for up to 2 days.
  • Delicious topped with Greek yogurt or a drizzle of honey.
