Chicken Burrito Casserole
A hearty, cheesy casserole packed with chicken, beans, rice, and Tex-Mex flavor — perfect for an easy family dinner!
Ingredients
- 2 cups cooked chicken, shredded
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup cooked rice (white or brown)
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and black pepper, to taste
- 1 cup crushed tortilla chips or strips
- Fresh cilantro or green onions for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a large mixing bowl, combine shredded chicken, black beans, corn, diced tomatoes with green chilies, cooked rice, sour cream, chili powder, cumin, salt, and pepper. Stir until well mixed.
- Spread the mixture evenly into the prepared baking dish.
- Sprinkle shredded cheddar cheese over the top, then add crushed tortilla chips for extra crunch.
- Bake uncovered for 20–25 minutes, or until hot and bubbly and the cheese is melted.
- Remove from the oven and let rest for 5 minutes before serving.
- Garnish with cilantro or green onions if desired.
