Chicken Burrito Casserole

A hearty, cheesy casserole packed with chicken, beans, rice, and Tex-Mex flavor — perfect for an easy family dinner!

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and black pepper, to taste
  • 1 cup crushed tortilla chips or strips
  • Fresh cilantro or green onions for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine shredded chicken, black beans, corn, diced tomatoes with green chilies, cooked rice, sour cream, chili powder, cumin, salt, and pepper. Stir until well mixed.
  3. Spread the mixture evenly into the prepared baking dish.
  4. Sprinkle shredded cheddar cheese over the top, then add crushed tortilla chips for extra crunch.
  5. Bake uncovered for 20–25 minutes, or until hot and bubbly and the cheese is melted.
  6. Remove from the oven and let rest for 5 minutes before serving.
  7. Garnish with cilantro or green onions if desired.
