Crockpot Chicken and Stuffing

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (6 oz) box stuffing mix
  • ¾ cup water
  • ½ cup sour cream (optional for extra creaminess)
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • 1 cup frozen green beans or mixed vegetables (optional)
  • Fresh parsley for garnish

Instructions

  1. Spray the inside of your crockpot with nonstick cooking spray.
  2. Place the chicken breasts in the bottom of the slow cooker. Season with garlic powder and black pepper.
  3. In a medium bowl, mix together the cream of chicken soup, water, and sour cream if using. Stir until smooth.
  4. Pour the soup mixture evenly over the chicken.
  5. Sprinkle the dry stuffing mix over the top. Gently press it down so some of the stuffing absorbs the liquid.
  6. If adding vegetables, spread them around the edges of the crockpot.
  7. Cover and cook:
    • LOW for 6–7 hours
    • or HIGH for 3–4 hours
  8. Once the chicken is tender and fully cooked, fluff the stuffing with a fork and serve warm.
