Ultimate Slow Cooker “Poor Man” Chicken & Onion

Ultimate Slow Cooker “Poor Man” Chicken & Onion (3 Ingredients)

This is humble, budget cooking at its best: chicken + onions + time. The onions melt into a sweet, savory sauce while the chicken turns fall-apart tender. No fancy ingredients. No effort. Big comfort.

Ingredients (3)

  • 900 g – 1.2 kg (2–3 lb) chicken thighs or breasts
  • 3–4 large onions, thinly sliced
  • Salt and black pepper (counted as pantry staples)

Optional (if you have them): a splash of oil or a knob of butter for richer onions.

How to Make It

  1. Layer the onions in the bottom of the slow cooker. Season with a pinch of salt.
  2. Place chicken on top. Season generously with salt and pepper.
  3. Cover and cook
    • LOW: 6–8 hours, or
    • HIGH: 3–4 hours
  4. Don’t add water. The onions and chicken release enough juices to create a natural broth.
  5. When done, stir gently so the onions coat the chicken in that silky sauce.

What Happens Inside the Pot

  • Onions slowly caramelize and collapse into a rich gravy.
  • Chicken self-bastes and becomes spoon-tender.
  • The flavor tastes like you cooked all day… because the slow cooker did.

How to Serve

  • Over rice, potatoes, or bread
  • Stuffed into sandwiches or wraps
  • Shredded and mixed back into the onion gravy
  • Next to eggs for a hearty breakfast

Tips

  • Thighs = juicier, more flavor. Breasts = leaner, still tender.
  • If it looks watery at the end, remove the lid for the last 30 minutes on HIGH.
  • Leftovers taste even better the next day.

Simple. Cheap. Deeply satisfying.
