 Golden Crispy Corn & Potato Fritters

 Ingredients

  • 2 large potatoes (boiled, peeled, and mashed)
  • 1 cup sweet corn (fresh / canned / frozen, drained well)
  • 1 small onion (finely chopped)
  • 1 egg
  • 3–4 tbsp flour (or cornflour for extra crispiness)
  • ½ tsp paprika (optional)
  • ½ tsp black pepper
  • Salt to taste
  • 2 tbsp chopped parsley or coriander (optional)
  • Oil for frying

Instructions

  1. Prepare potatoes
    • Boil potatoes until soft, then mash them well.
  2. Mix ingredients
    • In a bowl, combine mashed potatoes, corn, onion, egg, flour, and seasonings.
    • Mix until you get a thick, sticky mixture that can hold shape.
  3. Shape fritters
    • Take small portions and flatten into patties.
  4. Fry
    • Heat oil in a pan over medium heat.
    • Fry fritters 3–4 minutes per side until golden and crispy.
  5. Drain
    • Place on paper towel to remove excess oil.

 Serving ideas

  • Garlic mayo
  • Spicy ketchup
  • Yogurt sauce with lemon
  • Hot sauce

 Tips for extra crispiness

  • Dry corn well before mixing
  • Don’t add too much flour (keeps them light)
  • Fry on medium heat (not high) so inside cooks properly while outside crisps
