Golden Crispy Corn & Potato Fritters
Ingredients
- 2 large potatoes (boiled, peeled, and mashed)
- 1 cup sweet corn (fresh / canned / frozen, drained well)
- 1 small onion (finely chopped)
- 1 egg
- 3–4 tbsp flour (or cornflour for extra crispiness)
- ½ tsp paprika (optional)
- ½ tsp black pepper
- Salt to taste
- 2 tbsp chopped parsley or coriander (optional)
- Oil for frying
Instructions
- Prepare potatoes
- Boil potatoes until soft, then mash them well.
- Mix ingredients
- In a bowl, combine mashed potatoes, corn, onion, egg, flour, and seasonings.
- Mix until you get a thick, sticky mixture that can hold shape.
- Shape fritters
- Take small portions and flatten into patties.
- Fry
- Heat oil in a pan over medium heat.
- Fry fritters 3–4 minutes per side until golden and crispy.
- Drain
- Place on paper towel to remove excess oil.

- Yogurt sauce with lemon
- Hot sauce
Tips for extra crispiness
- Dry corn well before mixing
- Don’t add too much flour (keeps them light)
- Fry on medium heat (not high) so inside cooks properly while outside crisps
