Keto Chocolate Cloud Waffle Sandwiches
Ingredients
For the chocolate waffles:
- 2 large eggs
- 3 tbsp almond flour
- 1 tbsp unsweetened cocoa powder
- 2 tbsp cream cheese (softened)
- 1 tbsp melted butter or coconut oil
- 1–2 tbsp erythritol or keto sweetener (to taste)
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- Pinch of salt
For the creamy filling:
- 1/2 cup heavy whipping cream
- 2 tbsp cream cheese (softened)
- 1–2 tbsp powdered erythritol
- 1/2 tsp vanilla extract
Instructions
1. Make the waffle batter:
- In a bowl, whisk the eggs until smooth.
- Add cream cheese, melted butter, and vanilla. Mix well.
- Add almond flour, cocoa powder, sweetener, baking powder, and salt.
- Stir until you get a thick, smooth chocolate batter.
2. Cook the waffles:
- Preheat your waffle maker and lightly grease it.
- Pour the batter into the waffle maker.
- Cook for 3–5 minutes until crispy outside and fluffy inside.
- Let them cool slightly so they firm up.
3. Make the cream filling:
- Whip the heavy cream until it starts to thicken.
- Add cream cheese, sweetener, and vanilla.
- Whip until light, fluffy, and cloud-like.
4. Assemble:
- Take one waffle.
- Spread a thick layer of cream filling.
- Top with another waffle to form a sandwich.
- Press gently and enjoy!
Tips:
- For extra chocolate flavor, add sugar-free chocolate chips.
- Chill the filling for 10 minutes for a firmer texture.
- Best served fresh, but can be refrigerated for 1–2 days.
