Keto Chocolate Cloud Waffle Sandwiches

Ingredients

For the chocolate waffles:

  • 2 large eggs
  • 3 tbsp almond flour
  • 1 tbsp unsweetened cocoa powder
  • 2 tbsp cream cheese (softened)
  • 1 tbsp melted butter or coconut oil
  • 1–2 tbsp erythritol or keto sweetener (to taste)
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • Pinch of salt

For the creamy filling:

  • 1/2 cup heavy whipping cream
  • 2 tbsp cream cheese (softened)
  • 1–2 tbsp powdered erythritol
  • 1/2 tsp vanilla extract

Instructions

1. Make the waffle batter:

  1. In a bowl, whisk the eggs until smooth.
  2. Add cream cheese, melted butter, and vanilla. Mix well.
  3. Add almond flour, cocoa powder, sweetener, baking powder, and salt.
  4. Stir until you get a thick, smooth chocolate batter.

2. Cook the waffles:

  1. Preheat your waffle maker and lightly grease it.
  2. Pour the batter into the waffle maker.
  3. Cook for 3–5 minutes until crispy outside and fluffy inside.
  4. Let them cool slightly so they firm up.

3. Make the cream filling:

  1. Whip the heavy cream until it starts to thicken.
  2. Add cream cheese, sweetener, and vanilla.
  3. Whip until light, fluffy, and cloud-like.

4. Assemble:

  1. Take one waffle.
  2. Spread a thick layer of cream filling.
  3. Top with another waffle to form a sandwich.
  4. Press gently and enjoy!

Tips:

  • For extra chocolate flavor, add sugar-free chocolate chips.
  • Chill the filling for 10 minutes for a firmer texture.
  • Best served fresh, but can be refrigerated for 1–2 days.
