No-Bake Coconut Rolls with Peanut Butter Swirl
An easy, no-oven dessert made with coconut and a creamy peanut butter filling. Soft, sweet, and sliced into beautiful spirals just like the photo.
Ingredients
For the coconut dough
- 2 cups finely shredded coconut
- 1 cup sweetened condensed milk
- 1 tablespoon melted butter
- 1 teaspoon vanilla extract
For the filling
- 4 tablespoons peanut butter
- 2 tablespoons honey or powdered sugar (to taste)
Instructions
- In a bowl, mix the shredded coconut, condensed milk, melted butter, and vanilla.
- Knead with your hands until a soft, moldable dough forms.
- Place the dough on plastic wrap and roll it into a thin rectangle.
- Mix the peanut butter with honey (or powdered sugar), then spread it evenly over the surface.
- Using the plastic wrap, roll the dough tightly into a log.
- Freeze for 30–40 minutes until firm.
- Slice into rounds to reveal the spiral pattern.
Tips
- If the dough is too dry, add a little more condensed milk.
- If it’s too sticky, add a bit more coconut.
- Chilling well makes clean slices.
Storage
Store in an airtight container in the fridge for up to 5 days, or freeze for longer storage.
