Chicken & Green Bean Bowl (Only 2 SmartPoints!)

A light, healthy, and super satisfying meal that’s packed with lean protein and fresh veggies — perfect for busy weeknights or meal prep!

 Ingredients

  • 2 boneless, skinless chicken breasts, diced
  • 3 cups green beans, trimmed
  • 1 red bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon sesame oil
  • Salt & black pepper, to taste
  • Optional: sesame seeds and green onions for garnish

 Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and season lightly with salt and pepper. Cook until golden and fully cooked through.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Add green beans and bell pepper. Cook for 5–7 minutes until vegetables are tender-crisp.
  5. Drizzle in soy sauce and sesame oil, stirring well to coat everything evenly.
  6. Cook another 1–2 minutes, then remove from heat.
  7. Garnish with sesame seeds and chopped green onions if desired. Serve warm!

 Tips

  • Serve over cauliflower rice for a low-carb option.
  • Add a splash of sriracha for extra heat.
  • Great for meal prep — stores well for up to 3 days in the fridge.
