Crockpot Garlic Butter Chicken, Corn & Potatoes
Dump it in and let the crockpot do the magic
Juicy chicken, sweet corn, buttery garlic sauce, and tender potatoes… the easiest comfort dinner!
Ingredients
- 2 boneless skinless chicken breasts
- 2 ears corn on the cob, cut into thirds
- 1 lb baby potatoes
- 5 garlic cloves, minced or whole
- 4 tbsp butter, melted
- 1 tsp paprika
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
- 1 cup chicken broth
- Fresh parsley, chopped (optional)
Instructions
- Add the baby potatoes and corn pieces to the bottom of the crockpot.
- Place the chicken breasts on top.
- In a small bowl, mix melted butter, garlic, paprika, Italian seasoning, salt, and pepper. Pour over everything.
- Add the chicken broth around the sides.
- Cover and cook:
- LOW for 6–7 hours
- or HIGH for 3–4 hours
- Once the chicken is tender and the potatoes are soft, garnish with fresh parsley and serve warm.
Optional Add-Ins
- Grated parmesan cheese
- Red pepper flakes for heat
- Green beans or carrots
- Extra butter for richer sauce
