 Honey BBQ Chicken Rice Skillet

One-pan comfort meal with juicy chicken, fluffy rice, and colorful veggies in a sweet BBQ glaze.

 INGREDIENTS

  • 1 1/2 lbs boneless chicken thighs, diced
  • 1 cup long-grain white rice, rinsed
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (bell peppers, corn, peas, or carrots)
  • 1/2 tsp paprika
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • Optional: chopped parsley or green onions for garnish

 INSTRUCTIONS

  1. Cook the chicken
    Heat olive oil in a large skillet over medium heat. Add diced chicken, season with salt, pepper, and paprika, and cook until browned (about 5–7 minutes).
  2. Sauté aromatics
    Add onion and cook for 2–3 minutes until soft. Stir in garlic and cook for 30 seconds.
  3. Add rice & liquids
    Stir in the rinsed rice, then pour in chicken broth, BBQ sauce, and honey. Mix well.
  4. Add veggies
    Toss in the mixed vegetables and stir to combine.
  5. Simmer
    Bring to a light boil, then reduce heat to low. Cover and simmer for 18–20 minutes, or until rice is tender and liquid is absorbed.
  6. Finish & serve
    Fluff the rice, garnish with parsley or green onions, and serve warm.

 TIPS

  • Use smoked BBQ sauce for extra flavor
  • Add a pinch of chili flakes if you like heat
  • Swap chicken thighs for chicken breast if you prefer leaner meat
