No Bake Banana Peanut Butter Cottage Cheese Icebox Coins

These chilled little icebox coins are creamy, sweet, and packed with banana peanut butter flavor that feels like the easiest little fridge treat. They slice into neat rounds, hold their shape beautifully, and have that soft cookie dough style texture people always love.

Ingredients:

• 1 cup cottage cheese
• 1 ripe banana
• 1/4 cup peanut butter
• 2 tablespoons honey
• 1 teaspoon vanilla extract
• 1 cup crushed vanilla wafers
• 2 tablespoons oat flour
• 2 tablespoons mini chocolate chips
• Pinch of salt

Methods:

Line a small loaf pan or tray with parchment paper so the chilled log is easy to lift and slice later.
Blend the cottage cheese, banana, peanut butter, honey, vanilla, and salt until completely smooth and creamy.
Transfer the mixture to a bowl and stir in the crushed vanilla wafers and oat flour until a thick dough forms.
Fold in the mini chocolate chips so each coin gets little sweet pockets throughout.
Scoop the mixture onto the parchment and shape it into a short thick log, smoothing the sides with the back of a spoon or your hands.
Chill for at least 2 hours until firm enough to slice neatly.
Cut into coins and keep refrigerated. The texture stays soft and creamy with that banana peanut butter cookie dough feel in every bite.
