Slow Cooker No Peek Chicken & Rice
The Ultimate Set-and-Forget Comfort Meal
There’s something magical about a meal you can toss together in minutes and come back to hours later—hot, creamy, and ready to serve. This “no peek” chicken and rice is pure comfort food: tender chicken, perfectly cooked rice, and a rich, savory flavor that feels like a warm hug at the end of the day. No stirring, no checking—just let your slow cooker do all the work.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice (uncooked)
- 2 cups chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1 packet onion soup mix
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 cup frozen mixed vegetables (optional)
- Fresh parsley for garnish (optional)
Instructions:
- Prepare the base:
In your slow cooker, combine the uncooked rice, chicken broth, cream of chicken soup, onion soup mix, garlic powder, and black pepper. Stir well until everything is evenly mixed. - Add the chicken:
Place the chicken breasts directly on top of the rice mixture. Do not stir. - Add veggies (optional):
Sprinkle frozen vegetables over the top if using. - Cook (no peeking!):
Cover and cook on low for 4–5 hours or high for 2.5–3 hours. Keep the lid closed—this helps the rice cook perfectly. - Finish and serve:
Once done, fluff the rice gently and serve the chicken over it. Garnish with fresh parsley if desired.
Tips:
- Don’t lift the lid while cooking—it releases steam and can affect the rice texture.
- You can swap chicken breasts for thighs for extra juiciness.
- Add shredded cheese at the end for an extra creamy finish
Why You’ll Love It:
- Minimal prep, maximum flavor
- One-pot meal = easy cleanup
- Family-friendly and super filling
- Perfect for busy days or lazy evenings
