Garlic Parmesan Crockpot Chicken & Potatoes
Ingredients:
- 3–4 chicken breasts or thighs
- 1 lb baby potatoes, halved
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and black pepper, to taste
- 2 tbsp butter
- 1/2 cup chicken broth
- Optional: chopped parsley for garnish
Instructions:
- Prep the base
Place the halved baby potatoes in the bottom of your crockpot. Season lightly with salt and pepper. - Add the chicken
Lay the chicken breasts or thighs on top of the potatoes. - Make the creamy garlic sauce
In a bowl, mix together the heavy cream, chicken broth, minced garlic, Parmesan cheese, Italian seasoning, paprika, salt, and pepper. - Pour & top
Pour the sauce evenly over the chicken and potatoes. Add small pieces of butter on top. - Slow cook
- Cook on LOW for 6–7 hours
- Or on HIGH for 3–4 hours
Until the chicken is tender and fully cooked.
- Finish & serve
Spoon extra sauce over everything and garnish with fresh parsley if desired.
Tips:
- For a thicker sauce, remove the lid during the last 20–30 minutes.
- You can add green beans or spinach near the end for extra flavor.
- Serve with crusty bread to soak up that creamy garlic sauce
