- 2 tbsp melted butter
- Pinch of salt
Instructions
1. Make the meatballs
- Preheat oven to 180°C (350°F).
- Mix all meatball ingredients until combined.
- Roll into small meatballs (about golf-ball size).
- Bake for 15–18 minutes until cooked through. Set aside.
2. Prepare the batter
- In a microwave-safe bowl, melt mozzarella + cream cheese (about 60–90 seconds).
- Stir until smooth and stretchy.
- Add eggs, almond flour, baking powder, cheddar, butter, and salt.
- Mix until you get a thick, sticky dough-like batter.
3. Assemble the muffins
- Grease or line a muffin tin.
- Add a spoonful of batter to each cup.
- Place one meatball in the center.
- Cover with more batter until sealed.
4. Bake
- Bake for 18–22 minutes until golden brown on top.
- Let cool slightly (the cheese inside will be HOT).
