 Cheesy Ground Beef Rice Casserole

 Ingredients

  • 1 lb (450g) ground beef
  • 1 cup uncooked white rice
  • 2 cups beef broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz / 300g) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • ½ cup milk
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano (optional)
  • Salt & black pepper to taste
  • 1 tablespoon olive oil

 Instructions

  1. Preheat oven to 180°C (350°F).
  2. Cook the beef
    In a large skillet, heat olive oil over medium heat. Add onion and cook until soft. Add garlic and ground beef, cook until browned. Season with salt, pepper, paprika, and oregano.
  3. Prepare the mixture
    Stir in the uncooked rice, beef broth, cream of mushroom soup, and milk. Mix well.
  4. Assemble
    Pour everything into a greased baking dish. Cover with foil.
  5. Bake
    Bake for 45–50 minutes, until rice is tender and liquid is absorbed.
  6. Add cheese
    Remove foil, sprinkle cheddar cheese on top, and bake uncovered for another 10 minutes until melted and bubbly.

Tips

  • Add vegetables like peas, carrots, or bell peppers for extra flavor
  • Swap cheddar with mozzarella for a stretchier texture
  • Use cooked rice to cut baking time in half
