Reese’s Peanut Butter Chocolate Chip Cookie Bites
Ingredients
- ½ cup (120g) unsalted butter, softened
- ½ cup (130g) creamy peanut butter
- ½ cup (100g) brown sugar, packed
- ¼ cup (50g) granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup (125g) all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup (130g) chocolate chips
- 12–16 mini Reese’s peanut butter cups (unwrapped)
Instructions
- Preheat oven
Set your oven to 180°C (350°F). Lightly grease a mini muffin tin or line it. - Cream the butter & sugars
In a bowl, beat the butter, peanut butter, brown sugar, and granulated sugar until smooth and creamy. - Add wet ingredients
Mix in the egg and vanilla extract until well combined. - Combine dry ingredients
In another bowl, whisk together flour, baking soda, and salt. - Make the dough
Gradually add the dry mixture to the wet mixture. Stir until just combined, then fold in the chocolate chips. - Shape & bake
Scoop about 1 tablespoon of dough into each mini muffin cavity.
Bake for 8–10 minutes, until lightly golden. - Add Reese’s center
Immediately press a mini peanut butter cup into the center of each cookie bite while still warm. - Cool
Let them cool in the pan for 10 minutes, then transfer to a rack.
Tips
- Don’t overbake—they stay soft and chewy this way.
- Chill the dough 20 minutes if it feels too soft.
- You can swap mini Reese’s with chunks if needed
