 Reese’s Peanut Butter Chocolate Chip Cookie Bites

Ingredients

  • ½ cup (120g) unsalted butter, softened
  • ½ cup (130g) creamy peanut butter
  • ½ cup (100g) brown sugar, packed
  • ¼ cup (50g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup (125g) all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup (130g) chocolate chips
  • 12–16 mini Reese’s peanut butter cups (unwrapped)

Instructions

  1. Preheat oven
    Set your oven to 180°C (350°F). Lightly grease a mini muffin tin or line it.
  2. Cream the butter & sugars
    In a bowl, beat the butter, peanut butter, brown sugar, and granulated sugar until smooth and creamy.
  3. Add wet ingredients
    Mix in the egg and vanilla extract until well combined.
  4. Combine dry ingredients
    In another bowl, whisk together flour, baking soda, and salt.
  5. Make the dough
    Gradually add the dry mixture to the wet mixture. Stir until just combined, then fold in the chocolate chips.
  6. Shape & bake
    Scoop about 1 tablespoon of dough into each mini muffin cavity.
    Bake for 8–10 minutes, until lightly golden.
  7. Add Reese’s center
    Immediately press a mini peanut butter cup into the center of each cookie bite while still warm.
  8. Cool
    Let them cool in the pan for 10 minutes, then transfer to a rack.

 Tips

  • Don’t overbake—they stay soft and chewy this way.
  • Chill the dough 20 minutes if it feels too soft.
  • You can swap mini Reese’s with chunks if needed
