 Creamy Chicken & Carrot Spread

 Ingredients

  • 1½ cups cooked chicken (shredded or finely chopped)
  • 1 medium carrot (finely grated)
  • 3 tbsp mayonnaise
  • 2 tbsp cream cheese (softened)
  • 1 tsp mustard (optional, for a little tang)
  • 1 small garlic clove (minced) or ½ tsp garlic powder
  • 1–2 tbsp lemon juice
  • Salt & black pepper to taste
  • Optional: chopped parsley or dill for freshness

 Instructions

  1. Prep the chicken: Shred or finely chop the cooked chicken until soft and easy to spread.
  2. Mix base: In a bowl, combine mayonnaise and cream cheese until smooth.
  3. Add flavor: Stir in lemon juice, garlic, mustard, salt, and pepper.
  4. Add texture: Mix in grated carrot and chicken.
  5. Finish: Add herbs if using and adjust seasoning to taste.
  6. Chill (recommended): Let it sit in the fridge for 20–30 minutes for better flavor.

 Serving ideas

  • Sandwiches or baguettes
  • Wraps with lettuce
  • Crackers or toast
  • Stuffed into pita bread
