Creamy Chicken & Carrot Spread
Ingredients
- 1½ cups cooked chicken (shredded or finely chopped)
- 1 medium carrot (finely grated)
- 3 tbsp mayonnaise
- 2 tbsp cream cheese (softened)
- 1 tsp mustard (optional, for a little tang)
- 1 small garlic clove (minced) or ½ tsp garlic powder
- 1–2 tbsp lemon juice
- Salt & black pepper to taste
- Optional: chopped parsley or dill for freshness
Instructions
- Prep the chicken: Shred or finely chop the cooked chicken until soft and easy to spread.
- Mix base: In a bowl, combine mayonnaise and cream cheese until smooth.
- Add flavor: Stir in lemon juice, garlic, mustard, salt, and pepper.
- Add texture: Mix in grated carrot and chicken.
- Finish: Add herbs if using and adjust seasoning to taste.
- Chill (recommended): Let it sit in the fridge for 20–30 minutes for better flavor.
