Low Carb Creamy Beef Bacon Cheddar Celery Boats
Ingredients
- 8–10 celery stalks, washed and cut into halves
- 250 g (½ lb) ground beef
- 6 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 100 g (3–4 oz) cream cheese (optional, for extra creaminess)
- 1 tbsp oil or butter
- 1 garlic clove, minced (optional)
- Salt and black pepper to taste
- A pinch of paprika or oregano (optional)
Instructions
- Prepare the celery
- Wash the celery stalks well.
- Cut them into 3–4 inch (8–10 cm) pieces.
- Pat dry and set aside.
- Cook the beef
- Heat oil or butter in a pan over medium heat.
- Add the ground beef and cook until browned.
- Add minced garlic (if using) and cook for 1 minute.
- Season with salt, pepper, and spices.
- Add the bacon
- Stir in the cooked, crumbled bacon and mix well.
- Make it creamy
- Lower the heat and add the cream cheese (if using).
- Add shredded cheddar cheese and stir until melted and creamy.
- Fill the celery
- Spoon the beef mixture into each celery stick.
- Optional baking step
- Place filled celery on a baking tray.
- Bake at 350°F (180°C) for 5–10 minutes until the cheese is bubbly.
Serving
- Serve warm or slightly hot.
- Garnish with chopped parsley or extra cheese if desired.
