 Low Carb Creamy Beef Bacon Cheddar Celery Boats

 Ingredients

  • 8–10 celery stalks, washed and cut into halves
  • 250 g (½ lb) ground beef
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 100 g (3–4 oz) cream cheese (optional, for extra creaminess)
  • 1 tbsp oil or butter
  • 1 garlic clove, minced (optional)
  • Salt and black pepper to taste
  • A pinch of paprika or oregano (optional)

 Instructions

  1. Prepare the celery
    • Wash the celery stalks well.
    • Cut them into 3–4 inch (8–10 cm) pieces.
    • Pat dry and set aside.
  2. Cook the beef
    • Heat oil or butter in a pan over medium heat.
    • Add the ground beef and cook until browned.
    • Add minced garlic (if using) and cook for 1 minute.
    • Season with salt, pepper, and spices.
  3. Add the bacon
    • Stir in the cooked, crumbled bacon and mix well.
  4. Make it creamy
    • Lower the heat and add the cream cheese (if using).
    • Add shredded cheddar cheese and stir until melted and creamy.
  5. Fill the celery
    • Spoon the beef mixture into each celery stick.
  6. Optional baking step
    • Place filled celery on a baking tray.
    • Bake at 350°F (180°C) for 5–10 minutes until the cheese is bubbly.

 Serving

  • Serve warm or slightly hot.
  • Garnish with chopped parsley or extra cheese if desired.

  • You can substitute ground beef with ground chicken.
  • Add chili flakes or hot sauce for a spicy kick.
