One-Pot Chicken Parmesan Pasta – A Warm Hug in a Bowl!
Ingredients
- 1 lb chicken breast, diced
- 2 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 cups marinara sauce
- 2 cups chicken broth
- 12 oz pasta (penne or rotini)
- 1 tsp Italian seasoning
- Salt & black pepper, to taste
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Fresh parsley or basil, for garnish (optional)
Instructions
- Heat olive oil in a large deep pan over medium heat.
- Add diced chicken, season with salt and pepper, and cook until lightly golden.
- Add onion and garlic; sauté for 2–3 minutes until fragrant.
- Stir in marinara sauce, chicken broth, pasta, and Italian seasoning.
- Bring to a gentle boil, then cover and simmer for 12–15 minutes, stirring occasionally, until pasta is tender.
- Reduce heat to low. Sprinkle mozzarella and Parmesan over the top.
- Cover for 2–3 minutes until cheese melts.
- Garnish with parsley or basil and serve hot.
