 One-Pot Chicken Parmesan Pasta – A Warm Hug in a Bowl!

Ingredients

  • 1 lb chicken breast, diced
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups marinara sauce
  • 2 cups chicken broth
  • 12 oz pasta (penne or rotini)
  • 1 tsp Italian seasoning
  • Salt & black pepper, to taste
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh parsley or basil, for garnish (optional)

 Instructions

  1. Heat olive oil in a large deep pan over medium heat.
  2. Add diced chicken, season with salt and pepper, and cook until lightly golden.
  3. Add onion and garlic; sauté for 2–3 minutes until fragrant.
  4. Stir in marinara sauce, chicken broth, pasta, and Italian seasoning.
  5. Bring to a gentle boil, then cover and simmer for 12–15 minutes, stirring occasionally, until pasta is tender.
  6. Reduce heat to low. Sprinkle mozzarella and Parmesan over the top.
  7. Cover for 2–3 minutes until cheese melts.
  8. Garnish with parsley or basil and serve hot.
