Marinated Cucumber, Onion, and Tomato Salad
Ingredients
- 3 medium cucumbers, peeled and sliced
- 1 medium onion, sliced into rings
- 3 medium tomatoes, cut into wedges
- ½ cup vinegar
- ¼ cup sugar
- 1 cup water
Instructions
- In a bowl, combine the sliced cucumbers, onion rings, and tomato wedges.
- In a separate bowl, mix the vinegar, sugar, and water. Stir until the sugar dissolves.
- Pour the marinade over the vegetables.
- Cover and refrigerate for at least 2 hours (overnight is even better for flavor).
- Stir before serving and enjoy chilled.
Tips
- Add a pinch of salt and black pepper for extra taste.
- Fresh herbs like parsley or dill make a great addition.
- Keeps well in the fridge for up to 2 days.
