 Low-Carb 3-Ingredient Cheese Olive Bombs

Servings: 18–24 cheese olive bombs (about 6–8 appetizer servings)

 Ingredients

  • 1 cup (about 4 oz / 115 g) finely shredded sharp cheddar cheese, packed
  • 3/4 cup (about 3 oz / 85 g) finely grated Parmesan cheese
  • 1 cup (about 5 oz / 140 g) pitted green olives, well drained and patted dry

 Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Make the cheese dough
    In a bowl, mix the cheddar and Parmesan together until well combined. Use your hands to press the mixture—it should form a slightly sticky dough.
  3. Wrap the olives
    Scoop about 1 tablespoon of the cheese mixture, flatten it in your palm, and wrap it around each olive. Roll gently to seal and form a ball.
  4. Arrange on baking sheet
    Place the cheese-wrapped olives on the prepared baking sheet, leaving a little space between each one.
  5. Bake
    Bake for 12–15 minutes, or until golden brown and crispy on the outside.
  6. Cool slightly & serve
    Let them cool for a few minutes before serving. Best enjoyed warm!

 Tips

  • Pat olives very dry so the cheese sticks well.
  • Add a pinch of garlic powder or paprika for extra flavor (optional).
  • Great as a low-carb snack, party appetizer, or keto treat.
