 Mini BBQ Meatloaf Bites

Servings: 12 (1 muffin tray)

Ingredients:

  • 500 g (1 lb) ground beef
  • 1 small onion, finely chopped
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper

For the glaze:

  • 1/3 cup BBQ sauce
  • 2 tbsp ketchup
  • 1 tbsp brown sugar (optional, for sweetness)

Instructions:

  1. Preheat oven to 180°C (350°F). Lightly grease a muffin tin.
  2. Mix the meat: In a bowl, combine ground beef, onion, egg, breadcrumbs, milk, and spices. Mix until just combined (don’t overmix).
  3. Shape: Divide the mixture into equal portions and press into each muffin cup.
  4. Add glaze: Mix the BBQ sauce, ketchup, and brown sugar. Spoon or brush it on top of each meat portion (just like in the image).
  5. Bake: Cook for 20–25 minutes until fully cooked through.
  6. Serve: Let them rest a few minutes, then remove and serve warm.

Tips:

  • You can swap beef with chicken or turkey.
  • Add cheese in the center for a stuffed version.
  • Serve with mashed potatoes, rice, or salad.
