4-Ingredient Irish Nachos

Ingredients:

  • 4 medium russet potatoes, thinly sliced
  • 1½ cups shredded cheddar cheese
  • 6 slices cooked bacon, crumbled
  • 2–3 tablespoons green onions, chopped (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the potatoes
    • Wash them well (you can leave the skin on).
    • Slice into thin rounds.
    • Arrange in a single layer on a baking sheet lined with parchment paper.
    • Lightly drizzle with oil and sprinkle with salt.
  3. Bake
    • Bake for 20–25 minutes, flipping halfway through,
    • Until the potatoes are golden and crispy.
  4. Add toppings
    • Remove from the oven.
    • Sprinkle the shredded cheddar cheese evenly over the potatoes.
    • Add the crumbled bacon on top.
  5. Melt the cheese
    • Return to the oven for about 5 minutes, until the cheese is melted.
  6. Serve
    • Top with chopped green onions.
    • Serve hot and enjoy

Tips:

  • Add sour cream or ranch dressing for extra flavor.
  • You can swap bacon with chicken or keep it vegetarian.
