Beef Enchilada Casserole

Ingredients:

  • 1 lb (500 g) ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup enchilada sauce (or seasoned tomato sauce)
  • 1 can (15 oz) black or red beans (optional), drained
  • 1 cup corn (optional)
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 6–8 tortillas (cut or whole, depending on your dish)
  • 2 cups shredded cheese (cheddar or mozzarella)

Instructions:

  1. Prepare the filling:
    • Heat a little oil in a pan over medium heat.
    • Add the chopped onion and cook until soft, then add garlic.
    • Add ground beef and cook until browned.
    • Stir in cumin, paprika, salt, and pepper.
    • Add enchilada sauce, beans, and corn (if using). Simmer for about 5 minutes.
  2. Assemble the casserole:
    • Preheat oven to 350°F (180°C).
    • In a baking dish, layer tortillas on the bottom.
    • Add a layer of beef mixture.
    • Sprinkle cheese on top.
    • Repeat layers (tortillas → beef → cheese) until ingredients are used.
    • Finish with a layer of cheese on top.
  3. Bake:
    • Bake for 20–25 minutes, until the cheese is melted and bubbly.
  4. Serve:
    • Let it cool for 5 minutes before slicing.
    • Garnish with fresh cilantro or serve with sour cream if desired.

Tips:

  • You can swap beef for chicken or make it vegetarian.
  • Add chili flakes or hot sauce if you like it spicy.
  • You can use flatbread instead of tortillas if needed.
