Beef Enchilada Casserole
Ingredients:
- 1 lb (500 g) ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup enchilada sauce (or seasoned tomato sauce)
- 1 can (15 oz) black or red beans (optional), drained
- 1 cup corn (optional)
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 6–8 tortillas (cut or whole, depending on your dish)
- 2 cups shredded cheese (cheddar or mozzarella)
Instructions:
- Prepare the filling:
- Heat a little oil in a pan over medium heat.
- Add the chopped onion and cook until soft, then add garlic.
- Add ground beef and cook until browned.
- Stir in cumin, paprika, salt, and pepper.
- Add enchilada sauce, beans, and corn (if using). Simmer for about 5 minutes.
- Assemble the casserole:
- Preheat oven to 350°F (180°C).
- In a baking dish, layer tortillas on the bottom.
- Add a layer of beef mixture.
- Sprinkle cheese on top.
- Repeat layers (tortillas → beef → cheese) until ingredients are used.
- Finish with a layer of cheese on top.
- Bake:
- Bake for 20–25 minutes, until the cheese is melted and bubbly.
- Serve:
- Let it cool for 5 minutes before slicing.
- Garnish with fresh cilantro or serve with sour cream if desired.
Tips:
- You can swap beef for chicken or make it vegetarian.
- Add chili flakes or hot sauce if you like it spicy.
- You can use flatbread instead of tortillas if needed.
