 Root Vegetable Bake

 Ingredients:

  • 2 large potatoes, peeled and diced
  • 2 carrots, sliced
  • 1 sweet potato (optional), diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2–3 tablespoons olive oil
  • 1 teaspoon dried thyme (or Italian seasoning)
  • 1/2 teaspoon rosemary (optional)
  • Salt and black pepper, to taste
  • 1/2 cup shredded cheese (optional – cheddar or mozzarella)
  • Fresh parsley for garnish (optional)

 Instructions:

  1. Preheat the oven
    Preheat your oven to 400°F (200°C).
  2. Prepare the vegetables
    Cut all the vegetables into similar-sized pieces so they cook evenly.
  3. Season
    In a large bowl, toss the vegetables with olive oil, garlic, thyme, rosemary, salt, and pepper.
  4. Bake
    Spread the vegetables evenly on a baking tray.
    Bake for 35–45 minutes, stirring once halfway through, until tender and golden.
  5. Add cheese (optional)
    Sprinkle the shredded cheese on top during the last 5 minutes of baking and let it melt.
  6. Serve
    Garnish with fresh parsley and serve hot

 Tips:

  • You can add other root vegetables like parsnips or turnips.
  • For extra flavor, add paprika or cumin.
  • Perfect as a side dish with chicken or meat
