Root Vegetable Bake
Ingredients:
- 2 large potatoes, peeled and diced
- 2 carrots, sliced
- 1 sweet potato (optional), diced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2–3 tablespoons olive oil
- 1 teaspoon dried thyme (or Italian seasoning)
- 1/2 teaspoon rosemary (optional)
- Salt and black pepper, to taste
- 1/2 cup shredded cheese (optional – cheddar or mozzarella)
- Fresh parsley for garnish (optional)
Instructions:
- Preheat the oven
Preheat your oven to 400°F (200°C). - Prepare the vegetables
Cut all the vegetables into similar-sized pieces so they cook evenly. - Season
In a large bowl, toss the vegetables with olive oil, garlic, thyme, rosemary, salt, and pepper. - Bake
Spread the vegetables evenly on a baking tray.
Bake for 35–45 minutes, stirring once halfway through, until tender and golden. - Add cheese (optional)
Sprinkle the shredded cheese on top during the last 5 minutes of baking and let it melt. - Serve
Garnish with fresh parsley and serve hot
Tips:
- You can add other root vegetables like parsnips or turnips.
- For extra flavor, add paprika or cumin.
- Perfect as a side dish with chicken or meat
