CHICKEN FAJITA LASAGNA
Smoky Fajitas Meet Creamy, Cheesy Lasagna — Tex-Mex Comfort at Its Best!

INGREDIENTS
- 2 cups cooked shredded or sliced chicken
- 1 tbsp olive oil
- 1/2 onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 cloves garlic, minced
- 1 packet fajita seasoning
- 1/2 cup water
- 9 lasagna noodles, cooked
- 1 1/2 cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1 cup ricotta cheese
- 1/2 cup sour cream
- 1 cup salsa or enchilada sauce
- 1/4 cup chopped fresh cilantro (optional)
INSTRUCTIONS
Preheat & Prep
Preheat oven to 375°F (190°C) and lightly grease a baking dish.
Sauté the Veggies
Heat olive oil in a skillet over medium heat. Sauté onion and bell peppers for 5–6 minutes until softened.
Add Chicken & Flavor
Stir in garlic (30 seconds), then add chicken, fajita seasoning, and water. Simmer 5 minutes until well coated.
Make the Creamy Layer
In a bowl, mix ricotta cheese and sour cream until smooth.
Start Layering
Spread a thin layer of salsa or enchilada sauce on the bottom of the dish.
Build the Layers
Add 3 lasagna noodles → ricotta mixture → chicken fajita mixture → mozzarella & cheddar.
Repeat
Repeat layers two more times, finishing with cheese on top.
Bake
Cover with foil and bake 25 minutes. Remove foil and bake 10–15 minutes more until bubbly and golden.
Rest & Serve
Let rest 10 minutes, garnish with cilantro, slice, and serve.
