Southern 4-Ingredient Cucumber Sandwiches

Southern 4-Ingredient Cucumber Sandwiches

 Ingredients

  • 1 loaf soft white sandwich bread
  • 8 oz (225 g) cream cheese, softened
  • 1/4 cup mayonnaise
  • 2 large cucumbers, thinly sliced

 Instructions

  1. Soften the cream cheese
Let it sit at room temperature for about 30 minutes so it spreads easily.
  2. Prepare the cucumbers
    • Wash and dry them
    • Slice very thin (almost see-through for best texture)
    • Pat dry with paper towels to remove excess moisture (this keeps bread from getting soggy)
  3. Make the spread
    In a bowl, mix:

    • Cream cheese
    • Mayonnaise
      until smooth and creamy.
  4. Assemble the sandwiches
    • Spread a thin layer of the mixture on each slice of bread
    • Add a layer of cucumber slices
    • Top with another slice of bread
  5. Trim and cut
    • Remove crusts (optional but traditional)
    • Cut into triangles or small squares
  6. Chill & serve
    • Refrigerate for 15–30 minutes before serving
    • Serve slightly chilled for best taste

 Tips

  • Use thin slices of cucumber for a delicate texture
  • Don’t skip drying cucumbers — it prevents soggy sandwiches
  • Best served fresh, but you can prepare them up to 2 hours ahead
