 Creamy Sausage Pasta Soup

 Ingredients

  • 1 lb (450g) Italian sausage (mild or spicy)
  • 1 small onion, diced
  • 2–3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14–15 oz) diced tomatoes
  • 1 cup heavy cream
  • 2 cups small pasta (ditalini, macaroni, or shells)
  • 1 tsp Italian seasoning
  • ½ tsp chili flakes (optional)
  • Salt & black pepper (to taste)
  • ½ cup grated Parmesan cheese
  • Optional: spinach or parsley

 Instructions

  1. Cook the sausage
    In a large pot, cook sausage over medium heat until browned. Break it into small pieces and drain excess fat.
  2. Sauté aromatics
    Add diced onion and cook 3–4 minutes until soft. Stir in garlic and cook 1 minute.
  3. Add broth & tomatoes
    Pour in chicken broth and diced tomatoes. Add Italian seasoning and chili flakes. Bring to a light boil.
  4. Cook the pasta
    Add uncooked pasta and simmer 8–10 minutes until tender.
  5. Make it creamy
    Lower heat and stir in:

    • heavy cream
    • Parmesan cheese

    Let simmer 2–3 minutes until thick and creamy.

  6. Finish & serve
    Add spinach (optional), adjust seasoning, and serve hot.

 Tips

  • Add cream cheese for extra richness
  • Use spicy sausage for more flavor
  • Serve with bread — perfect combo
  • Soup thickens as it cools → add broth if needed
