Stuffed Potatoes

Ingredients
- 5 potatoes
- 400g minced meat
- Salt
- Pepper
- Parsley (chopped)
- 1 egg
- 2 tbsp breadcrumbs (15g)
- Extra virgin olive oil
- 200g cheese (grated or sliced)
Instructions
- Cook the potatoes
Boil the potatoes in salted water until tender (about 15–20 minutes).
Let them cool slightly, then cut them in half and scoop out the inside (keep the skins intact). - Prepare the filling
In a pan, heat a little olive oil.
Cook the minced meat until browned.
Season with salt, pepper, and parsley. - Mix everything
In a bowl, combine the scooped potato, cooked meat, egg, and breadcrumbs.
Mix well until you get a thick, moldable filling. - Stuff the potatoes
Fill each potato skin with the mixture and press lightly. - Add cheese
Top each stuffed potato with cheese. - Bake
Place in a baking dish, drizzle with a little olive oil, and bake at 180°C (350°F) for 15–20 minutes, until golden and cheesy.
