Creamy Bacon Ranch Roll-Ups

 Ingredients

  • 8 large flour tortillas
  • 8 oz cream cheese, softened
  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup finely chopped green onions
  • 1/4 cup finely chopped red bell pepper (optional)

 Instructions

  1. Make the creamy filling
    In a medium bowl, mix together the softened cream cheese and ranch seasoning until smooth and well combined.
  2. Add the mix-ins
    Stir in shredded cheddar cheese, crumbled bacon, green onions, and red bell pepper (if using). Mix until evenly distributed.
  3. Assemble the roll-ups
    Lay a tortilla flat on a clean surface. Spread a thin, even layer of the filling over the entire tortilla, leaving a small border around the edges.
  4. Roll tightly
    Roll the tortilla up tightly into a log shape. Repeat with remaining tortillas.
  5. Chill (important step)
    Wrap each roll in plastic wrap and refrigerate for at least 1–2 hours. This helps them firm up and makes slicing easier.
  6. Slice and serve
    Remove from the fridge and slice into 1-inch bite-sized pieces using a sharp knife.

 Serving Tips

  • Serve cold as an appetizer, party snack, or lunchbox idea
  • Great with extra ranch dip or spicy mayo
  • You can also add jalapeños for a spicy kick
