Amish Butter Pecan Icebox Bars
Ingredients
For the crust:
- 3/4 cup (170g) butter, softened
- 1 cup brown sugar (packed)
- 1 cup white sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1 cup chopped pecans
Instructions
- Preheat oven to 350°F (175°C).
Grease a 9×9-inch baking pan. - In a large bowl, cream together butter, brown sugar, and white sugar until smooth and fluffy.
- Add the eggs and vanilla extract, and mix well.
- Stir in the flour and baking soda until combined.
- Fold in the chopped pecans.
- Spread the batter evenly into the prepared pan.
- Bake for 30–40 minutes, or until the edges are golden and the center is set.
- Let cool completely, then cut into bars.
Icebox Tip
These bars are even better after chilling in the fridge for a few hours. The texture becomes fudgy, dense, and rich, like pecan pie in bar form.
Storage
- Store in airtight container
- Keep in fridge up to 5–6 days
- Can be frozen up to 2 months
