Amish Butter Pecan Icebox Bars

 Ingredients

For the crust:

  • 3/4 cup (170g) butter, softened
  • 1 cup brown sugar (packed)
  • 1 cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 cup chopped pecans

 Instructions

  1. Preheat oven to 350°F (175°C).
    Grease a 9×9-inch baking pan.
  2. In a large bowl, cream together butter, brown sugar, and white sugar until smooth and fluffy.
  3. Add the eggs and vanilla extract, and mix well.
  4. Stir in the flour and baking soda until combined.
  5. Fold in the chopped pecans.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 30–40 minutes, or until the edges are golden and the center is set.
  8. Let cool completely, then cut into bars.

 Icebox Tip

These bars are even better after chilling in the fridge for a few hours. The texture becomes fudgy, dense, and rich, like pecan pie in bar form.

Storage

  • Store in airtight container
  • Keep in fridge up to 5–6 days
  • Can be frozen up to 2 months
