Roasted Tomato Garlic Soup
Description
A rich and comforting roasted tomato soup made with caramelized tomatoes, garlic, and onions. Smooth, flavorful, and perfect for cozy meals.
Ingredients
- 2 lbs ripe tomatoes (Roma or plum), halved
- 1 whole garlic bulb
- 1 large onion, quartered
- 3 tablespoons olive oil
- 2 cups vegetable broth (or chicken broth)
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- 1 teaspoon dried basil (or fresh if available)
- 1/2 teaspoon thyme (optional)
- 1/2 cup heavy cream (optional, for creamy texture)
Instructions
1. Prepare the Vegetables
- Preheat oven to 200°C (400°F).
- Place tomatoes and onion on a baking tray.
- Cut the top off the garlic bulb, drizzle with olive oil, and wrap in foil.
- Add it to the tray.
- Drizzle everything with olive oil, salt, and pepper.
2. Roast
- Roast in the oven for 35–40 minutes until soft and slightly charred.
- Let them cool slightly.
3. Blend
- Squeeze the roasted garlic out of its skin.
- Add all roasted vegetables to a blender.
- Blend until smooth.
4. Simmer
- Pour the mixture into a pot.
- Add broth, basil, and thyme.
- Simmer for 10–15 minutes on medium heat.
5. Add Cream (Optional)
- Stir in heavy cream for a richer taste.
- Adjust seasoning with salt and pepper.
Serving Suggestions
- Serve hot with toasted bread
- Perfect with grilled cheese sandwich
- Garnish with fresh basil or a drizzle of cream
Tips
- Use very ripe tomatoes for the best flavor.
- Add a pinch of sugar if the soup tastes too acidic.
- For extra depth, roast a red bell pepper with the tomatoes.
