Blueberry Oat Bars
Ingredients
- 2 cups rolled oats
- 1 cup blueberries (fresh or frozen)
- 1/2 cup brown sugar or honey
- 1/2 cup melted butter or coconut oil
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon (optional)
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice (optional)
Instructions
- Preheat the oven
Preheat your oven to 350°F (180°C). Line a baking pan with parchment paper. - Mix dry ingredients
In a bowl, combine oats, flour, sugar, baking soda, cinnamon, and salt. - Add wet ingredients
Add melted butter and vanilla extract. Mix until crumbly. - Make the base
Press about 2/3 of the mixture firmly into the bottom of the pan. - Add blueberries
Toss the blueberries with lemon juice (optional), then spread evenly over the base. - Add topping
Sprinkle the remaining oat mixture over the blueberries. - Bake
Bake for 30–40 minutes, until the top is golden brown. - Cool and cut
Let the bars cool completely before slicing.

Soft, chewy base with a juicy blueberry layer and a slightly crispy topping
