 Blueberry Oat Bars

 Ingredients

  • 2 cups rolled oats
  • 1 cup blueberries (fresh or frozen)
  • 1/2 cup brown sugar or honey
  • 1/2 cup melted butter or coconut oil
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice (optional)

 Instructions

  1. Preheat the oven
    Preheat your oven to 350°F (180°C). Line a baking pan with parchment paper.
  2. Mix dry ingredients
    In a bowl, combine oats, flour, sugar, baking soda, cinnamon, and salt.
  3. Add wet ingredients
    Add melted butter and vanilla extract. Mix until crumbly.
  4. Make the base
    Press about 2/3 of the mixture firmly into the bottom of the pan.
  5. Add blueberries
    Toss the blueberries with lemon juice (optional), then spread evenly over the base.
  6. Add topping
    Sprinkle the remaining oat mixture over the blueberries.
  7. Bake
    Bake for 30–40 minutes, until the top is golden brown.
  8. Cool and cut
    Let the bars cool completely before slicing. 

Result

Soft, chewy base with a juicy blueberry layer and a slightly crispy topping
