 Keto Ham & Cheddar Bites

 Ingredients

  • 3 cups cooked ham, chopped
  • 1 cup cheddar cheese, shredded
  • 6 oz cream cheese, softened
  • 4 large eggs
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 cup onion, finely chopped (optional)
  • 2 cloves garlic, minced
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • Salt to taste

 Instructions

  1. Preheat your oven to 350°F (180°C).
  2. If using onion and garlic, cook them in a pan for a few minutes until soft, then let cool.
  3. In a large bowl, mix the cream cheese and eggs until smooth.
  4. Add the chopped ham, cheddar cheese, almond flour, baking powder, and spices.
  5. Mix everything well until fully combined.
  6. Spoon the mixture into a greased muffin tin or shape into small balls and place on a baking tray.
  7. Bake for 20–25 minutes until golden and firm.
  8. Let them cool slightly, then serve.

 Notes

  • Perfect for a low-carb / keto diet
  • Can be eaten warm or cold
  • Store in the fridge for up to 4 days
