OKLAHOMA NUT CANDY
(Old-fashioned Aunt Bill’s Brown Candy)
Ingredients
- 3 cups granulated sugar
- 1 cup heavy cream
- 1/4 cup unsalted butter
- 1 teaspoon vanilla extract
- 1/8 teaspoon baking soda
- 1/2 cup pecans
- 1/2 cup walnuts (or use all pecans)
This candy is known for its rich caramel flavor + crunchy nuts.
Instructions
1. Prepare
- Line a baking pan with parchment paper and lightly grease it.
2. Toast the nuts
- In a dry pan, toast pecans and walnuts for about 5 minutes until fragrant.
- Set aside.
3. Cook the caramel
- In a saucepan, add sugar + cream.
- Cook over medium heat, stirring until sugar dissolves.
- Continue cooking until it thickens and turns a deep caramel color.
4. Add butter & vanilla
- Remove from heat.
- Stir in butter and vanilla until smooth.
5. Add baking soda
- Mix in baking soda (this helps create a lighter texture).
6. Add nuts
- Stir in toasted nuts until evenly coated.
7. Set the candy
- Pour mixture into prepared pan.
- Let it cool completely (about 2 hours).
8. Cut & serve
- Cut into small squares or bars. Tips
- Don’t rush the cooking — slow caramel = best flavor.
- Use a candy thermometer if possible (soft-ball stage ≈ 115°C).
- You can add chocolate on top for extra taste.
