Classic Blackberry Cobbler
A warm, old-fashioned Blackberry Cobbler filled with sweet, juicy blackberries and topped with a buttery golden crust. Serve it warm with a scoop of vanilla ice cream for the ultimate comforting dessert!
Ingredients
- ½ cup salted butter, melted
- 1 cup self-rising flour
- 1½ cups granulated sugar, divided
- 1 cup whole milk
- ½ teaspoon vanilla extract
- 3 cups fresh or frozen blackberries
- Vanilla ice cream, for serving
Instructions
- Preheat the oven to 350°F (175°C).
- Pour the melted butter into an 8-inch square baking dish.
- In a medium bowl, combine the self-rising flour and 1 cup of the sugar.
- Add the milk and vanilla extract. Stir until the batter is smooth and well combined.
- Pour the batter directly over the melted butter. Do not stir.
- In another bowl, gently toss the blackberries with the remaining ½ cup sugar.
- Spoon the sweetened blackberries evenly over the batter. Again, do not stir. As the cobbler bakes, the batter will rise around the berries and create a delicious golden topping.
- Bake for 50 to 60 minutes, or until the top is golden brown and the blackberry filling is bubbling.
- Allow the cobbler to cool for about 10 minutes before serving.
- Serve warm with a generous scoop of vanilla ice cream.
Tips
- You can use either fresh or frozen blackberries. If using frozen berries, there is no need to thaw them first.
- If you don’t have self-rising flour, mix together 1 cup all-purpose flour, 1½ teaspoons baking powder, and ½ teaspoon salt.
- For extra flavor, add a little lemon zest or a pinch of cinnamon to the blackberry mixture.
