Mediterranean Blueberry Banana Baked Oatmeal Cupcakes

These soft, naturally sweet baked oatmeal cups are packed with wholesome oats, ripe banana, and juicy blueberries. They’re perfect for a quick breakfast, meal prep, or a grab-and-go snack.

Ingredients

For the Baked Oatmeal Cups

  • 2 cups old-fashioned rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 2 ripe bananas, mashed
  • 1 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey or maple syrup
  • 1 cup fresh blueberries
  • 2 tablespoons chopped walnuts or almonds, optional

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin pan or line it with silicone muffin liners.
  2. In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt.
  3. In another bowl, mash the bananas until smooth. Whisk in the milk, egg, vanilla, and honey or maple syrup.
  4. Pour the wet mixture into the dry ingredients and stir until everything is well combined.
  5. Gently fold in the blueberries and nuts if using.
  6. Divide the mixture evenly among the muffin cups, filling each about three-quarters full.
  7. Bake for 25–30 minutes, or until the oatmeal cups are golden around the edges and set in the center.
  8. Let them cool in the pan for about 10 minutes before transferring them to a wire rack.
  9. Enjoy warm, or refrigerate for an easy breakfast throughout the week.
